I am SO excited to have been chosen to be the nutrition ambassador for Sochal, a new health and wellness social networking site that is due to launch in late spring / early summer 2018. We are working hard right now to get everything ready for launch and I can tell you now that I can’t wait for the launch. This is an innovative and brilliant concept in the health and wellness world and we are really looking forward to sharing it with you all.

This weeks meal is a fantastic and budget friendly veggie option. I cooked this for both veggies and meat eaters and both loved it (and the meat eaters were very surprised!).
Serve with couscous and some kale OR burger it up and serve the ‘steak’ in a wholemeal bap with mayo, relish and lots of green leaves of some sort!
Either way, it is a great recipe to try and coming in at under £2.50 for 4 portions, a great meal for when you are trying to save some money.
Slice cauliflower lengthways (As in pic) and roast with a little oil and spices (we love paprika, cumin and chilli plus salt and pepper).
whilst it is roasting, prepare a dressing with tahini, yoghurt and lemon juice, adding more lemon until you get your desired consistency and then season with some salt and pepper. Drizzle over and serve with the kale and couscous. YUM!
